Mille Feuille
Mille feuille of Passion fruit creme, Mango and Strawberry with homemade raspberry sorbet.
Delicious light and refreshing dessert great option for new summer menu.
For Passion Fruit creme I'am using two of my recipes Ideas.
One of them is base for creme brulee mix.
6 egg yolk
Zest of 2 limes
4 passion fruits
100 g golden caster sugar
500 ml double creme
1 vanilla stick
I'am making my Brulee mix. Next I,am putting mix in to the piping bag and leave for minimum 2 hours to set. Is nice thick mixture.
For lighter option I will use my basic recipe for Passion fruit creme.
4 passion fruit
zest of 1 lime
300 ml double creme
3 tbs vanilla or caster sugar
100 g of Mascarpone
For the layers of the mille feuille other great tip is to use filo pastry. We lay one sheets of the pasty and brush with egg, placing another sheet on the top and press, repeat using four sheets of pastry.
Cut the circles or rectangle shapes sprinkle with icing sugar on both sides and fried on the clean frying pan using clarified butter until golden brown. Cool down the pastry.
