Vegetable Wellington


This tasty Vegetable Wellington is filled with Mushroom duxelle, Spinach, grilled Courgette, caramelized Leek and roasted Couscous Ricetta.

Mushroom duxelle:
-garlic
-thyme
-shallot
-parsley
-chopped mushrooms
-celery salt
-pepper

Couscous Ricetta:
-vegetable stock
-coucous
-red pepper
-red onion
-asparagus
-salt
-sugar
-turmeric
-cumin


Roasted Courgette:
Slice courgette lengthwise sprinkle with salt and oil. Grilled on each side on the grill or frying pan till golden brown.

I served this Wellington with roasted baby vine tomatoes and pot of Chimichurri.
Prepared, glazed with coconut oil. Delicious idea for summer menu with fresh and rich chimichurri.
