Apple and Cardamom Tarte Tatin

Apple and Cardamom Tarte Tatin, bay leaf ice cream.

One of my favourite desserts, great for summer or winter.
We made our own ice creams and sorbets. On our menu you can find many, different flavours.
Halva ice cream
Rose buds
Bay leaf
Mint and lime
Chocolate brownie
Buttermilk and vanilla
And many more.

570ml milk
275ml double cream
6 egg yolks
110g caster sugar

Bring to the boild milk, creamed sugar.
Mix the egg yolks in the bowl.
Add slowly 150ml of milk mixture in to the yolks.
Add slowly egg yolk mixture in the simmering milk. Take of the heat. Done!

You can use many different ingredients as a flavouring.
If you wont strong, reach flavour. Keep the cinnamon stick or bay leaf in the milk when chilling.
This will infuse milk more.
