Sourdough Focaccia
Sourdough Focaccia.
If you not sure if your sourdough starter is ready. Do the float test: drop tbsp in to the bowl of water, if is floats it's ready. This mean the bacteria start to grow.
200g Sourdough starter
15g of sea salt, table salt or smoked salt for extra flavour (personal choice).
840g water ( Stir all to combine)
ADD:
1.125g of Bread flour ( stir to form sticky dough)
Cover with a towel and let rise for 4 till 15 hours at room temperature. Or until doubled in size.
Times is vary depending on the time of year. Or how warm your kitchen is.
Summer, this may take only 4-5h.
Winter when cooler 6-15h
When is doubles drizzle with the olive oil.
Gently fold sides of the dough in to the middle.
Leave in the bowl for another 4-5h.
After 4-5, the dough is ready to be dimpled, stretched and salted.
Strench on 1/1 gastro tray, use olives, rosemary chopped, garlic sliced or minced, salt and capers ( capers optional)
After stretching and seasoning leave dough to relax for 15-20min.
Bake at 220c for 25-30 minutes or till golden brown. Happy days!!
