Taramasalata- smoked cod roe pate


Is like smoked cod roe pate.
Great dish as a starter, dipping sauce or tapas meal with some toasted sourdough 

500g smoked cod roe 
200ml garlic infused olive oil
200ml olive oil
3tbsp lemon juice
1bsp fish sauce
1tsp smoked paprika 
60ml warm water
Pinch of salt 

Soak cod roe in cold water for minimum of 4h. Then peel of the skin.
Put cod roe in mixing bowl and mashed with the fork. Then use electric beater if you got one. Mix on high speed till you will create paste. ( forming lumps and working it's way up the sides of the bowl).

Add lemon juice and keep mixing.
Start adding oils and water, one drop at the time
Like you will make mayonnaise. Mix till you will create soft sponge paste.
Add salt and paprika.
Mixture need to be soft and mushy before  adding oil and water. As will separate.

You can add chopped dill, chive or parsley for extra flavour.
Serve with warm sourdough toasts. Also you can use as a puree for scallops or any seafood dishes.

For garnish you can chopped some cornishons, dill, shallots and capers. DONE!
