Tomato and N'Duja sauce
Great Autumn recipe going well with prawn or fish dishes.
250g gr n´duja
1 tablespoon fennel seeds roasted and crushed
1 table spoon coriander seed roasted and crushed1 tablespoon olive oil1 head of chopped garlic
9 chopped shallots
10 g fresh thyme, chopped
1 table spoon celery salt
t tablespoons chopped, preserved lemon
250 ml white wine
100 ml red wine vinegarjuice of two lemons
600 ml tomato sauce
250 ml prawn sauce
500 ml water
3 tablespoons of caster sugarchopped parsley

pepper
On low heat saute olive oil, garlic, shallots, chopped thyme, celery salt and spices. Do not burn the spices.
Once the n'duja is rendered add preserved lemons. Cook them for 5 minutes.
Add the lemon juice, prawn sauce, wine, vinegar, water. Cook them for 15 min on medium heat, then add the tomato sauce. Reduce to thicken the broth. finish with fresh parsley.
Served with bread rubbed with garlic, sprinkle with parsley.
