Prawns bisque
2kg of prawns shells or any shellfish
2x tin of chopped tomatoes appx. 3kg
1x tin of tomato paste, around 800g
150ml of oil
4x carrots
1x packet of celery stick
4x large white onions
2x heads of garlic
15x bay leaf
Handful of fresh thyme
300ml of white wine
100ml of brandy
10x whole black peppercorn
3x tablespoon of celery salt
3x tablespoon of smoked paprika
3x tablespoon of sweet paprika
1x tablespoon of cayenne pepper
Cook shells, onion, garlic, thyme, celery and oil on low heat till soft. Do not burn the onion and garlic. Sautee approximately 10min. Add white wine and brandy, cook for another 10min.
Add tomato paste and cook further for another 10min.
Add 10L of water and the rest of the ingredients, cook on low heat for 1.5-2.
hours.
Pass the bisque through a sieve, leave to cool down.
