Rich tomato sauce

2x tin of chopped tomatoes
1x tin of tomato paste
2x apples
2x red peppers
2x yellow peppers
4x large white onions
1x head of garlic
1x tablespoon of salt
1x tablespoon of celery salt
1x tablespoon of crack pepper
Handful of fresh thyme
100ml of olive Oil

On low heat sautee, garlic, onion, thyme and 100ml of oil. Do not burn the onion and garlic. Cook gently without colouring, approximately 10min.
Add tomato paste and cook for further 5min on low heat, mixing every 2 minutes.
Add chopped tomatoes, reduce gastrique and seasoning.
Cook everything for 30-40min on low heat, till sauce will start get thicker.


Gastrique
800ml of red wine
300ml of balsamic vinegar
200g of caster sugar

Put a all ingredients into the pan and reduce by half. Set aside.
