UMAMI / NOOCH best vegan dressing
Great dressing to take our salads to next step! also delicious served as a dipping sauce for seafood. Salty, sour, bitter flavour can stimulate your appetite as well as leave you satisfied after your meal.
I'm serving this delicious sauce on many of my dishes for years. Umami is one of the five basic tastes even though many people are only learning about in now. Created by a Japanese UMAMI word which means, umai which means ''delicious'' and mi, which means ''taste.'' The perfect name, as is a delicious taste!
80ml water
1x tbsp rice vinegar ( I used apple cider vinegar or red wine vinegar )
1x tbsp agave syrup ( or honey )
1x whole lemon
10g fresh ginger ( optional )
4x cloves of garlic
2x tbsp nutrition dry yeasts flakes
200ml avocado oil ( I used sunflower oil, olive oil may be too strongly flavoured )
Blitz gently the water with ginger, garlic, agave syrup, yeasts and lemon. Then with the machine running, pour the oil very slowly through the hole in the cap of the blender, if you are whisking your dressing slowly pour oil whisking gently untill all the ingredients will bond together. The dressing will thicken and emulsify as you gradually add the oil, little by little. Taste and add salt and pepper as desired.
