One of my favorite winter desserts.
Named after sisters Tatin this classic dessert is served in my kitchen with Cardamom and bay leaf ice cream, salted caramel sauce.
For pastry I'am using, puff pastry, ready made paratha bread sheets or few sheets of filo pastry for extra texture.
Ice cream mix:
1.5L Double Cream
1L Full fat milk
14 bay leaf ( fresh are the best or use dry)
8x Cardamom seeds
2 star anise
Pinch of freshly cracked black pepper
410g - 500g Caster Sugar
26x egg yolk
Add all the spices and half of the sugar in to the milk. Bring to the boil. Take of the heat and leave for 60min to infuse. Sieve out all the spices.
Meanwhile made Pate a bombe: in a bowl,using hand mixer whisk egg yolks and sugar until pale. Still beating your egg mix gently pour in the bay leaf milk, mixing constantly.
Using a measurig jug, scoop out about 200ml of infused milk and beat in to egg yolks to slacken them. Reheat ice cream until it just comes to the boild take off the heat and stir in rest of the youlks. Simmer until you will get custard/thick texture. I allow 10-15min for this stage. Be careful do not overheat the mix as eggs will scramble.
Pour the ice cream mix into the boxes or flat tray, cling film the top, and leave it to cool 3-4h. When custard cool down, box and put in the freezer.
When not using Ice cream maker!? After around 90 min take it out ice cream of the freezer and quickly beat to a slush, using a hand mixer or food processor. Repeat that process twice more. That way we are breaking down any ice crystals that have started to form. Also that way our ice creams are getting lighter as we are adding air bubbles in to the mix.
Caramel:
300g sugar
150ml water
200g salted butter
1.5L Double cream
Shot of espresso
On gently heat caramelize sugar and water until it becomes a golden ( caramel colour ), for this stage I allow 7-12min. Best temperature for caramelization is 170c-177c.
When ready, quickly take out of the heat, add chopped butter, cream and espresso, put back on the stove and let simmer for 10min to combine all ingredients.
