Delicious and refreshing creme dessert served with raspberry sorbet and grapefruit curd. Available for my customers on my private chef service menu. 

80g sugar

3 lemons zest and juice 

6 juice from fresh passion fruits 

4 eggs separated 

1 egg white

470ml double cream 

4 gelatin leaf 

Passion fruit jelly 

100ml freshly quizzed passion fruit juice 

100ml Kombucha 

Pinch of saffron 

2 gelatin leaves

30g caster sugar
