Sourdough pancakes







My delicious dish.. served at breakfast time or brunch. 

We can make this recipe savoury or sweet, with caramelized Cox's apples and vanilla, or as a savoury dish with cured and grilled bacon, poached egg and bordelaise sauce or with hot smoked salmon, lobster breadcrumb, spinach, hollandaise.

150ml almond milk ( hazelnut milk optional , for savoury recipe use full fat milk infused with bouquet garni )

1 tsp vanilla extract or 1/2 tsp paste 

4 1/2 tbsp caster sugar ( for savoury we are using just 1 1/2 tbsp of sugar ) 

150g sourdough starter ( active, feeded 1-2h before making pancakes )

1 egg ( beaten and at room temperature)

140g cox's apple ( chopped into small 5mm brunoise )

250g plain flour ( sifted)

1tsp baking powder 

Pinch of salt 

1x shallot ( chopped cut into brunoise )

2x cloves of garlich ( finely grated )
