Mr. White's game pie, fricassee of woodland mushrooms, fumet of ceps, Box Tree's braised red cabbage

British game is in season from August through early in the new year, depending on which game you want to use. You can also buy your game from a good butcher as well as online, often year-round, but this will have been frozen if out of season. 

For this recipe, Marco use mostly pheasent for the richness but, we can use any game you most enjoy. A mixture of different meat is recommended, though, to create a more interesting pie. In winter season's in Rudloe Arms, we serve generous size portions with steamed spiced red cabbage, King Oyster mushrooms and rich game jus. 
The texture of Oyster mushrooms is sometimes likened to abalone or scallops, which makes them an interesting option for vegetarians and are often billed as ' mushrooms steaks' or vegan scallops also they're hiled for their meaty texture and umami flavour.
Because they are slightly sweet, with a hint of anise, and they also have a umami flavour that has been compared to seafood.
